Quick 15 Minute Vegetables Stir Fry

 

I never knew making vegetable stir fry was this quick and easy and yet still healthier than takeout. It legit takes you 15 minutes to prepare this vegetable stir fry with the chewy mushrooms, crunchy carrots, broccoli, onions, and bell peppers glazed in the perfect sweet and sour ginger garlic sauce. You can for sure easily serve this dish as a vegetarian side dish or as a main course along with some garlic fried rice or traditional Chinese rice. The ingredients of this recipe are always going to be available in your fridge. Trust me it's the recipe that you ALWAYS want to try. 

 

Ingredients: 

Fresh or canned mushrooms -1 cup 

Sliced and peeled carrots - 1/2 cup 

Diced onions - 1/2 cup 

Bell peppers - 1/4 cup 

Fresh or frozen broccoli - 1/2 cup 

Soy sauce -1/2 cup

Oyster sauce - 1/4 cup 

Chopped garlic - 4 tbsp 

Chopped ginger - 1 tsp 

Honey - 1/4 cup 

Salt - as per requirement 

Pepper - 1/2 tsp 

Chilli flakes - 1/2 tsp or as per requirement 

Cashew nuts ( roasted ) - 1/2 cup

Cornflour - 1 tbsp

 



 

Directions : 

Heat a nonstick pan or a traditional wok on medium heat and add around 2-3 tablespoons of sesame seed oil. Add in half the amount of ginger and let it simmer on medium heat until it softens and starts smelling good and gives off an aroma. The garlicky smell of this dish is what makes it resemble so much to traditional takeout. It takes you down from china town all the way to New York. 

 

Now that the garlic has started giving off an aroma add in the diced onions, and mushrooms and stir fry on medium heat for about 4 minutes. On the other hand, mix the wet ingredients all together and set aside. 

The next step is to add the remaining vegetables and stir-fry them until they are thoroughly cooked. This might take you around 7-8 minutes to reach this point. At this point, you can add the prepared mixture of soy sauce, oyster sauce, and honey along with all the spices and the remaining crushed ginger and garlic. 

Let it simmer for 2-3 minutes and add in the cornflour. As soon as the stir fry thickens up and reaches your preferred consistency immediately serve it and top it off with the roasted cashew nuts. 

This stir fry is a super hit when served with garlic-fried sticky rice.
