THE GIGI HADID PASTA without vodka
The rich and creamy Gigi Hadid Spicy Pasta is worth all the hype. Here is how you can cook your own bowl of perfection in just 30 minutes with the ingredients that you probably have at home.

INGREDIENTS
· 16 Ounces Pasta of choice
· 1/2 cup Olive Oil
· 1 tbsp Finely Minced Garlic
· 2 Red Onions
· 2/3 cup Tomato paste/Puree
· 1 1/3 cup Heavy Cream
· Red Chilli Flake
· Basil
· Salt
· Pepper
· 1/2 cup freshly grated Parmesan
· 2 tbsps Unsalted Butter
· Water
Optional Garnishes
· Finely Chopped Parsley
· Red Chilli Flakes
· Oregano
LET’S GET COOKING
THE PASTA
· Boil a large pot of water and add 2-3 pinches of salt in it.
· DO NOT ADD OIL it wont let the sauce stick to the pasta
· Once boiling add pasta, I prefer rigatoni pasta or penne and cook according to the instructions given on the package.
· Once cooked, take out about a cup of pasta water for the sauce.
· Drain the pasta and run it under cold water to prevent them from cooking further.
THE SAUCE
· Add olive oil in a saucepan over medium heat.
· Finely chop up the red onions and add them to the saucepan.
· Stir the ingredients, until the onions turn soft an almost transparent. Do not caramelize he onions.
· Next add in the minced garlic for the aroma and extra flavour.
· Now add your tomato paste or puree and let it heat up till you see some bubbles forming on the surface.
· Add the heavy cream and stir well.
· Once fully incorporated add fresh basil leaves.
· If you can’t get your hands on the fresh basil leaves you can add stored bought dried basil leaves as well.
· Let the contents of the sauce pan cook for 2 minutes.
· Add in the freshly grated Parmesan.
· You will notice that the sauce has thickened up. Add the pasta water that you saved earlier along with the unsalted butter.
· This will loosen up the sauce and give it a flowy yet creamy texture.
· It’s time to spice up things. Add red chilli flakes and black pepper to taste.
· Add salt as well. Be careful as the pasta water also contained salt. We don’t want our blood pressure to go up.
· Add the cooked pasta and gently mix the sauce to coat the paste evenly.
· Grate a little bit more Parmesan cheese on top.
· Garnish with oregano and parsley and Voila! Dinner is served.

SERVE THE PASTA WITH
