INGREDIENTS:

FOR THE BRINE

·       1/3 cup of sugar (granulated)
·       1/3 cup of Kosher salt
·       1 tsp red pepper flakes
·       1 peel of orange
·       1 bay leaf
·       4 pounds of chicken wings

FOR FRYING

  •     2 cups of flour
  •     ¼ cups of crushed potato chips
  •     ¼ cup cornmeal
  •     2 tsp garlic powder
  •     2 tsp black pepper
  •     2 tsp (or more) salt
  •     1 tsp cayenne pepper
  •     ½ tsp baking powder
  •     2 cups of buttermilk
  •     1-quart canola oil
  •        Hot sauce for serving

PROCEDURE:

    Preparing the brine

1.    Firstly, start off by making the brine. Fill a large pot with about 5 cups of water and bring it to a boil. Next, take an orange and start peeling it up, but don’t throw away the peels! Once you’re done with that, add salt, sugar, bay leaf, and red pepper flakes to the pot, along with your orange peels. Keep on boiling it until the sugar and salt starts dissolving. Once it has dissolved, put it in a large bowl and let it cool.

2.     Now take your chicken and put it in the large bowl where you poured the brine. Cover it and refrigerate for about 10 hours.

3.   Once that’s done, separate the chicken from the brine and pat it dry with tissue paper. You can throw away the brine now as it is of no need anymore.

The Frying Part

1.    Take your flour, cornmeal, potato chips, garlic powder, salt, pepper, cayenne pepper, and baking powder and put them in a large container. After that, begin stirring the whole mixture.

2.  Add some buttermilk in a separate container. Now, take a piece of chicken and submerge it in the buttermilk. Roll the chicken piece in the flour mixture that you made, completely coating it with the batter. Continue doing this for all the chicken pieces.

3.   After that, dry the wings for about half an hour before you begin to fry them. Put the dried chicken pieces in a large pot and heat the oil to 330-350 degrees Fahrenheit and carefully fry the chicken pieces.

4.     Keep on frying the chicken for about 8 to 10 minutes. You will notice that the chicken pieces will attain a golden color. That’s when you know they’re ready to be eaten!

5.     Take the pieces of fried chicken out and put them in a tray. They’re now ready to be served. Enjoy!
